The Diamond Piglin can be found alongside normal piglins. Wherever you can find a regular piglin, you may just find a Diamond Piglin.

A very for-sure place to find them is in a bastion remnant. Be careful, though, as the other piglins won't take to kindly to you attacking their friend.
